[Music] Melanie refers to a place to an eating and drinking establishment where you consume lots of mezes and mazes are similar to tapas little small plates of appetizers you have you start with cold ones you follow with warm ones and sometimes followed by a main course and of course what you drink with mezes in may honey in Turkey is a drink national drink for Turkey national2/31
alcoholic drink for Turkey raka raka is the same thing as guzo in Greece and Eric in Lebanon or even in Iran we refer to it as raka and I'm going to introduce you to raka I'm going to introduce you to the ritual of eating consuming meze and how you drink raki in what amounts you sip rutted and the most important ingredients of typical meze feast in3/31

are prepared here in-house fresh daily vegetables seasonal so whatever seasonal will be here on your at your table so let's look at here and see what we've got no matter what kind of Mahana you go to whether they are seafood oriented or they are meat oriented cheese is a must sometimes they offer more than one type of cheese here we have very nice full fat feta6/31
cheese ok and this is messy for two people so there are two slices of feta cheese we have cucumber slices because there is this amazing marriage between cold cucumber and salty cheese it kinds of goes so well together if you haven't tried it try it just have crisp you can use it if you're in the US or in England you can use English cucumber and have7/31

is on the Aegean coast of Turkey it's same thing with various Greek places you go Olive is a must and you may have black variety you may have brown small variety in this particular place they are offering these house marinated green olives and at the top here you see crushed Oregano's these Oregano's also grow here in fatiha so everything here is fit here the olive oil9/31

way to describe fava bean in texture it's a bit similar to hummus but I would say you take it several notches up in terms of complexity and taste we call this here fava which stands for fava bean in some places they refer to it as lima beans what they do is they make a paste with the lima beans they grind it after they cook it and11/31
they put salt very little spices olive oil garlic but when they serve it they serve it in little blocks and on the top here at the top here you see chopped red onions and lots of dill and during our farmers market session I had explained it to you that herbs have a major major place in Turkish cuisines every day we eat pounds of herbs parsley dill12/31
cilantro mint basil you name it well as you see the top of this delicious fava lima bean paste is filled with dill again the marriage is all about marriage and what goes with what is absolutely spectacular pause okay now we have here another seasonal mess a what they do in Turkey for some reason and I haven't figured out why they don't use celery stalks they use13/31
celery roots so with salary rules there several hot dishes they prepare but also raw celery roots and it's very fragrant it's very crisp crunchy they shred it and in this particular messy we call it cannabis medicine in this particular meze they shred the celery root they mix it with thick Greek style Turkish style yogurt with some garlic and on top they sprinkle walnuts and again it's14/31
crunchiness and refreshing taste of celery roots mixed with creamy garlicky yogurt and on top you have more crunch element and creamy elements of walnuts the combination again the marriage is a spectacular you know now that I'm thinking of a very important point to make when you look at all these messes here every single one of these dishes are so healthy okay they're all vegetarian you don't15/31
have anything that is deep-fried you don't have anything that has saturated fat you don't have anything that is processed that comes out of a can or goes into the microwave and it's vegetable vegetable vegetables so I guess if you come to a may honey every day you would have a fully balanced meal so that's one reason ideas to come to me honey because later you're going16/31

places they use cinnamon and that's all it is there it is your pumpkin and this dip here is the yogurt cucumber dip it's very similar to tsuki that we see in Greek restaurants it's creamy drier thicker yogurt mix with shredded cucumber and then at the top here you see dried mint and again mint the refreshing mint the crunchy refreshing cucumber mixed with homemade homemade I'm going19/31
to emphasize this homemade creamy yogurt after that we have pepper this is for people who love the heat elements you know hot and that's me and I think by now you have figured it out I have to have everything hot and I make sure that they had this before I came here this evening I said do you have your sauteed hot pepper and they said yes20/31
we do and these hot peppers again they are grown in this fatty region they simply slice it and then they sauteed in olive oil with salt and at the top there is the cooling elements of yogurt and a top of the yogurt you will see that they have crushed paprika red pepper and again I would say one of my favorites is it's a must for me21/31
in any kind of Meza table here we have eggplant dish again these are all cold messes they fry the eggplant green pepper tomatoes and they let it cool get to be room temperature afterwards they prepare again with yogurt you know how much probiotics you're getting here yogurt yogurt yogurt I mean think about the health and we got to talk about the half health elements more and22/31
this eggplant dish again is it's delicious is cooling you put a little bit on your bread you have it but the sip of rocket which we're gonna get to you are going to be amazed how the flavors combined and the top here the sauce what they do is they pureed the tomato and then they reduce it with garlic and olive oil a little bit of salt23/31
nothing else again simple pure delicious now what we have here is regular roasted pepper I think many of you are familiar I forgot to talk about the universe reality of some of these dishes roasted red pepper can be easily Italian roasted red pepper can be easily from Spain roasted red pepper is consumed ugly in Greece and here we are in Turkey and roasted red pepper or24/31
roasted green pepper roasted pepper is a must for messy tables you will see it almost everywhere in many mayonnaise not only Mahon is even in regular restaurants as part of the appetizer in the appetizer section of the menus next to this and this was brought for me especially they know that I love heat I love my slop spicy I love it hot again yogurt you see25/31
you keep seeing yogurt we have creamy yogurt and on top of it these are dried pepper okay these dried peppers they have been dehydrated dried what they do is they take those right Chili Peppers and I know they do that in Southeast Asia they do it their different version in Vietnam they do it in Thailand and in order to boost and revive its its its flavor26/31
