a bit of flavor of the place first I'm going to stop and3/31 purchase this great photography book from a family-owned unique clothing shop the book is the collection of photography and writings by the world's renowned Turkish photographer and author photo akbash those of you who watched my segment on fethiye the beautiful are already familiar with his amazing work turkey is a great place for ceramics and pottery work with hundreds of years experience in the trade you can find4/31 large selections of amazing products colorful or rustic traditional or abstract fancy or casual just check out the colors of these little bowls I have a thing for mini bowls like this I use them to separate my ingredients during cooking I use them as a small serving bowls for nuts and seeds sometimes as individual dipping bowls for my sauces the uses are basically limitless and they don't5/31 occupy too much space in my small kitchen cabinet oh and they are bargains as far as your wallet is concerned [Music] I've been meaning to check out this particular store for spices for months but never got around to it I've heard great stuff about the shop run by the same family for two plus generations so let's check it out together and see what we find time6/31 for some Turkish delight [Music] in Turkey people like to buy their spices fresh them from spice experts and from stores that are specialized only only on herbs and spice and this is one of those doors here in historic fatness hospital there are some nuts here but their specialty here particularly in this door is the Turkish sweets Turkish candies you know them as Turkish Delight but here7/31 we call them la boum is El okay um local and you see the variety of la boum here the turkish delights and after my walk I like to have a little bit of sugar blues so I'm gonna try some and I'm gonna purchase some of these and then you have the spices over here it's amazing first of all it's very very fresh so you don't have8/31 these bottled stuff that's been sitting on the shelf for years and God knows for how long in factories all sorts of exotic spices or traditional spices like you have cinnamon sticks over here and here's the chia seed it's absolutely amazing to buy your produce from specialized places you go to the butcher to get your meat you go to fishmonger to buy your fish you come here9/31 to get your spice and not in huge quantities just enough to last you for a couple of months then you come and you buy it again and this is a place that people come almost on daily basis so it's not like you gotta go out of your way to to shop [Music] I was just asking about these turkish delights that i'm familiar from a different region10/31 of turkey and i asked whether or not these particular ones are from Fetty or not he says they make it here but this is the traditional ones that they are specialized and they make it with fruit so it's only sweetened with fruit juice this is made of pumpkin and dates you go wrong with it's amazing and it doesn't have anything artificial insides it's freshly made here11/31 in fact year it's my family business my father and me and my brothers we have been making this for more than 30 years second generation fresh cherries and we are keeping them in our country's culture and we cook them in the winter that pumpkin and dates oh I'm gonna get a masterpiece for us I have our sweets doesn't contain any artificial coloring agent inside and also12/31 we don't use gluten inside we don't call them gluten free since there is first condemnation risk it's an open area but we don't put as an ingredient that's that's very distinctive pace with cherry I've never had anything but carry dry care unit do sell these buy pounds for example that pumpkin ones at nine lira Wow that's about quarter pound and it's about less than three dollars13/31 hmm I'm gonna have some of that my favorite is pomegranate and pomegranates are they from here you know how they talk about Nueva cuisine here the idea I can understand pomegranate because pomegranate grows here nuts I can understand but somebody thought of mixing rose petal with this rose petal has a very delicate I'm dying to pieces I won't have some of those as well my new14/31 year resolution is going to be need more of these petia style so is this particular to better this particular company most of them are special their whispies long to us how many generations I'm second generation do you like the idea mixing different flavors Lily is there any idea you came up with years ago which one normally we eventually track with Church to live yes chili sauce15/31 lantern now that's modern this model but this is something we've been making platform last ten years it was a beginning with a job we know that our truck and labor he loved the stratosphere we every day he's coming anything you know we now shops and circuits normal to go to a shop and have some pipe and we made it in a small job we could be16/31 chilly inside you know right now in the u.s. in Europe they are mixing chocolate cocoa with hot chili pepper now this is the first time we do how hot chile is it the mild chili of sweet but I like the quality of the chili is smoking it has a smoky flavor [Music] my grandmother's I grew up in Chico and all our pepper blaze came from this17/31 never can oh my god does this you all know how much I love spicy hot food only less it's about two hours drive from here and we are going to have several episodes on gotcha why are you giving me this big pieces and also we are famous for my family they're very good at sweets and they're very good it's voice value some more to have to18/31 chew it you shake your therapist is our best selling spices because we use a lot it's meat spice this is our mixture it has 17 different spices cumin coriander sweet paprika [Music] oh you put it inside the meatball - rounded because we welcome ops our we call it so you are into cooking can you tell when someone has passion when somebody has passion it shows because19/31 if you go to think about it you're in a supermarket even if they have this in a bottle and put it on the shelf nobody's gonna come and describe to you what's in there or have any passion about it this is why in Turkey we like to go to a butcher fishmonger spice store bakery bread oven store each one of these places that you go you20/31 get to interact with the owners you get to interact with the shops you get to interact with the people who who have passion about their skills about their trades it's not so impersonal that you go to supermarket walk around the aisles put this stuff in the basket those days for me has been over for the past four months I'm getting to really enjoy shopping for my21/31 food because it's a process it's not something robotic or our automatic that you go to a store and you buy that's part of living that's part of life let's talk about the spiders but this is you know world many Oregon all different types yes [Music] [Music] this is this is the time we know back in the States so if let's say name two different kinds like22/31 for this food I would use time but food would be using a man who knows about cooking I'm definitely gonna be visiting this place because I love to cook I love to experiment with various cooking and this is horse Anastacia unhip all of them because my grandmother's family owned all these different villages that that that supermarket you just find one type of pistachio which is it23/31 might be good you don't know but they have optimized product but not if they optimize for that might not be good for you what is the name for nutmeg in Turkish we use this for summer Center in 50 years have you tried with salad never I use it whenever I use [Music] star anise I also did training with Indian cooking so star anise I grinded for24/31 my grandma's Allah but I lived in Vietnam for a year now huh and star anise those of you who love foie ba is the Vietnamese soup you boil the bone for eight hours and star anise first you roast it for four to three minutes so it releases its flavor and then you put it with the whole cinnamon sticks and cloves in the block and again it25/31 has feeling this man is this man is shocking me I never heard a bunch of things that I'm learning for the first time making Jam but star anise tomatoes once once upon a time he was one of the biggest partners in the business this is a bright comet right this is something you cannot find elsewhere because so organic nature and local and the handmade these are26/31 sea salt and rock granite seeds you are eating salt with only growing succeed if you solve this all with flavor and sweet learning those before me very learning I'm learning large each other is a is turmeric they have to do everything differently England they have to they have to drive on the other side I love British people by the way I'm just resting we are countering27/31 all that by showing the fact the realities and have you decide and then ask and say why are they telling you these lies not only about Turkey tomorrow is going to be Greece a few years from now or three months from now it's gonna be another country so question everything you read try to trust today in the Internet age two blogs through YouTube at least people28/31 have an opportunity to see the other side and see when the lies are being presented in the past we didn't have it so with that this is a store that if you come to Penn here you'll put on top of your lip and I'm gonna get the name and I'm gonna get the link from you [Music] wow what an experience I can assure you everything that29/31 happened in there was spontaneous you see this is what I mean by the importance of small family-owned businesses but they're a bakery or a butcher or a spice and sweets shop like this I ended up with a lot of new information I learned I got to ask questions I got to taste and try things and I got to form a bond with get to know another30/31 vendor I'll be visiting and shopping from regularly hospital has been a shopping and dining area for over a hundred years the shopping experience here is nothing like going to a cold sterile mall or a strip center how much of it is due to being historic I'm not sure but I know it is one of those places that people whether locals or tourists feel connected to in31/31 more than one way it has that vibe about it DEEP LINKED selected quote: Please confirm your sharing options: Share this transcription, and highlight this paragraph.
