[Music] hello everyone after several back-to-back episodes on serious serious topics and with this memorial we can't being here in front of us and the being in Florida I have been to several barbecue parties and I'm gonna be in at least one more I decided to just do it a more light on the lighter side just kind of stay on the lighter side happier side and talk
about food I don't know those of you who are familiar with me may recall my video series from Turkey where I covered food culture history travel and my latest video from from I would say maybe a 3-4 weeks ago where we discussed how to have parallel production on other expertise and interests I have including travel which I have done so much so much of it all
around the world and I'm not talking about travel that is limited to going to a place with a cruise ship or going on a package vacation for a week I have lived in several countries and when I say extensive travel I talk about those that have lasted months if not years in each country anyhow with the Memorial weekend all the barbecue parties I have been going
to and two more I believe I have two more between now and Tuesday I just wanted to talk about barbecue in fact I had a discussion about this last night we were invited by some wonderful wonderful people here in Naples Florida and over this barbecue dinner I was telling them about barbecue from around the world I have lived in Australia I have live in New Zealand
I have lived for a year and a half in Vietnam Russia Turkey Iran I have I have had barbecues in in in Korea so barbecue is sometimes the universal thing and there's always been this debate out there about different methods of barbecue and who was known in terms of the country or a region for barbecue let's call it the king of barbecues well last night I
was talking about which country and specifically where I considered to be the world's greatest barbecue and why so for this episode because this is gonna be on the lighter side I'm gonna have a brief discussion of barbecue the differences both methods you know preparation the grilling style etc and and then declare the winner as far as globally speaking all around the world which country where do
I consider to be absolutely absolutely number one kingdom of barbecue now I've heard and you have heard in fact everywhere in the world when you say Australia people say oh yeah the Barbie land land of barbecue Australians are known for their barbecue and that's what I thought as well and as I mentioned I I have been to Australia several times and a couple of times I
have a state more than 3-4 months I have been to Sydney I have been to Melbourne I have been in a place called Tasmania which is the most southern portion of Australia and while there I have explored barbecue both commercially meaning my cafes and restaurants etc there but also being invited to so many different Australians house and these are wonderful Australians inviting me over for a
Barbie with Australian Barbie come on over les les brill the barmy and let's open up some beer there and then have a good merry time so I've done a lot of that oh it was not what I was expecting and it's good don't get me wrong in fact I can't think of a single country where I would actually say barbecue this country is absolutely awful it
just yet happened you know whether it's in Argentina or Vietnam or Korea or turkey or Australia barbecue cannot be awful BBQ cannot be bad I mean how can you and how could you combine nice meat with with wood or charcoal or whatever grill and and come up with something really bad unless your meat sucks and a barbecue is a good thing I'm talking about the degree
here you know everything is relative in this world oh I had gone there with really big expectations because I have been a barbecue buff all my life okay I grew up with so much barbecue it's a very commonly used method of cooking especially between the months of April May to October in Turkey anyhow I went there with this big expectations and I was I liked it
but I was really surprised because everywhere I went barbecue men's we take it nice chunk of meat or I would say Australian style rib eyes day or their version of New York Strip which is much thinner and tougher type of a meet then let's say what we have here in the United States like revise our skinny like here we have rib eyes that are really more
bold okay they are take their juicy their fatty and then I usually can't even finish the whole portion when you get a decent sized ribeye steak here well there are tears is much more expensive and it's much thinner and a bit tougher it doesn't have as much as their marbling that they're fat marbles in the leg in the meat now it's the grill whether it was
wood-fired or the gas grill meat and then afterwards sprinkle of salt very very basic and there was nothing else well this is the country that is known for their Barbie so I kept asking them questions I said well do you use ever things like smoking methods or like use the wood chips whether it's the Hickory or Applewood or mesquite or you know hmm any kind of
other types of the smoking methods no how about marinating you know or whether it's a dry rub or when you marinate in the wet kind of a marinade no we just like our stuff grilled you get the meat good hunk of chunk of meat and just throw it in there usually gas grill over everything you turn a turn at the time it was important and there
is barbecue well that right there said to me that definitely they were wrong people around the world and I was wrong to consider or think of Australia as the king of Barbie king of barbecue other countries in terms of the variations Vietnam they their own special barbecue do they marinate yes so they have the marinade components but there is no such a thing as any kind
of the wood chip or smoke or the smoking process none of that same thing with Turkey and they usually they're people like to do lamb and they you sometimes use marinade but they don't have that you know many variations and this complex amazing art of barbecue what I consider to be the author of barbecue process there therefore being this Memorial weekend okay and having gone to
several places for barbecue I decided to just throw it in there because I I have taken many many cooking classes certifications the school I love food I love eating it I love cooking everybody love talking about it and people who know me here in real life in person they know that I'm obsessed with food and usually they express this surprise thing you are just so passionate
about food like oh yeah that I am and with barbecue when it comes to barbecue being being too you know in all these countries trying all these different barbecues knowing about all the barbecue methods I decided to declare the king of barbecue king of barbecue as far as I'm concerned and I am as close as an expert you can come to not the kind of experts
we were talking about in my previous episodes would be Texas USA because I have not come across I have not experienced anything that can hello sue to the passion and the methodologies the variations of the methodology of barbecue grilling whether it's the brisket or or the ribs or the stay order Rose it takes barbecue through different hams okay hands down number one country number one state
number one place in the world as far as I'm concerned is Texas USA barbecue and I invite anyone any of you to come and challenge it it will be fun first of all we are not engaging in some sort of a superiority competition but I'm confident enough to say that I do not believe there is any place in the world that can overall compete with Texas
smoking methods I had a very good friend from Texas Vietnam veteran former Red Team Leader he if he is watching right now this video hi Steve I haven't seen you for a long long time but my god they took barbecue to to to a different level in fact they were so into it he and his family that's for the smoking and the grilling he didn't even
use like going there buying the Weber or whatever charcoal barbecue we'll know the type of barbecue grill charcoal grill and the smokers they used had to be specially ordered from Texas and they were custom made okay I'm talking about this this is like a machine okay ready for for the smoking process and and they would turn any kind of a simple rose to a five-star Michelin
cuisine and I think this right I mean I don't need to describe it for those of you here in the United States but for my audience tour in the UK or Australia or Spain or France or Turkey nothing like it so yes with this episode I want to start a discussion it's Memorial behind here on barbecue and put my vote here and declaration and say the
